Salad with chickpeas, avocado and dried tomatoes


Finally the summer arrived also here in Vienna! How long I've been waiting for it. Frankly, I was a bit afraid that the summer will never arrive in Vienna - especially at the end of May, when we had only 15 degrees. But now it is here, and now everything is well. But there is a downside of summer...I have no desire to spend time in the kitchen. But I have to eat so salads are more than welcome. Therefore I have today a very tasty and healthy salad recipe for you: salad with chick peas, avocado and dried tomatoes.


You need:


1 can chickpeas
½ avocado
feta cheese
1 red onion
½ pepper bell
5-6 dried tomatoes
salt
pepper
olive oil
Balsamic Vinegar


This is how we proceed:


Place chickpeas in a sieve and wash well. Cut avocado and feta cheese into cubes. Slice onion and pepper. Cut the dried tomatoes into small pieces. Put everything in a bowl, add salt and pepper and mix well. Add olive oil and balsamic vinegar and mix again. Give for 30 minutes in the refrigerator so that the flavors nix well.
