Although I love cupcakes, I didn’t bake them lately. And this although baking them don’t require much time. But there is always something else that I want to bake and then I say to myself...but you've already made cupcakes and you know how they taste, but this dessert or that cake you don’t know…so bake this instead. I am no longer trying to change this…I don’t plan to bake cupcakes anymore…if it happens, it happens. Some weeks ago I had the choice again: cupcakes or cake. But then I decided for the cupcakes and so the Oreo cupcakes were baked.
You need:
For the frosting:

g double cream

ml whipping cream

tbsp icing sugar
For the batter:

eggs, separated in egg white and yolk

pinch of salt

tsp vanilla sugar

g butter, at room temperature

tbsp cacao powder

tsp baking powder

tbsp whipping cream
This is how we proceed:
I always start with the frosting, in order to be able to cool down. Separate 12 Oreo cookies by rotating them and scrap with a spoon the filling. Give into a bowl. Whip the cream, add cream cheese, the Oreo filling and icing sugar and blend everything well together. Fill cream into a piping bag with a star tip and place in the refrigerator.

Preheat oven to 180 ° C. Break the cookies into small pieces and set aside 3 tablespoons (for the frosting).
For the dough whisk egg whites with a pinch of salt until stiff. Gradually add sugar and vanilla sugar. Whisk. In a second bowl mix yolks and butter until fluffy. Mix together flour, cocoa and baking powder. Add the flour mixture alternating with the cream to the butter-egg mixture. Add beaten egg whites and stir briefly. Fold in crumbled cookies.
Line a muffin tin with paper cases and pour in the batter. Bake for 20 min on the middle rack. Remove cupcakes from the muffin tin and allow cooling.
Top the cupcakes with the frosting.
Sprinkle the remaining cookie crumbs on the frosting. Half 6 Oreo cookies and place one half on the frosting. The cupcakes are ready to be served.
