I was so happy about spring and the warm days. And now this...since several days it rains and it's so cold. I don’t like the cold and rainy days. I want to sit outside in the sun and enjoy a glass of Hugo. The only good thing about these rainy days is that I cook. So I was "forced" by this weather to cook this delicious red lentil soup. You will not believe me when I tell you that this soup was 5 years on my to-cook list. I have read good things about this Turkish red lentil soup. That it is very healthy and delicious. And guess what? That's true! So don’t wait many years to cook it.
You need:

g red lentils

This is how we proceed:
Peel and dice the onion. Peel and cut into small pieces garlic and carrots. Heat 2-3 tbsp oil in a large pot and sauté onion, garlic, carrot and cumin for 1 minute. Add tomatoes and paprika and cook for another 5 minutes. Stir occasionally.
Add lentils. The lentils I've used do not have to be pre-cooked. Add 600 ml of water and boil for 20 minutes.
Puree the soup and season with salt and pepper. Serve.
