Vegetarian quesadillas

Last year in autumn I went in Mexico for holidays. It was a beach holiday in Plaja del Carmen. It was so beautiful...in Vienna it was almost winter, and there were about 30 degrees. Sun, beach and sea...what more could you want? Maybe good food? I love the Mexican kitchen and I was curious to try many new dishes. I am not exaggerating when I tell you that I ate guacamole daily. Always and everywhere. And salsa. And something that I liked to eat for breakfast was quesadillas. I did not want to wait until my next Mexico vacation to eat quesadillas again, so I made them at home. If you want to try also quesadillas, here is the recipe.


You need:

4 tortillas
½ avocado
½ pepper bell
½ red onion
3-4 cherry tomatoes
cheddar cheese

Servings: 2


This is how we proceed:


Dice avocado, pepper, onion and tomato. Finely grate Cheddar cheese.

Heat a non-stick frying over medium heat. Place a tortilla in the pan and spread some of the ingredients evenly over half of the tortilla, sprinkle with grated cheddar and fold the other half of the tortilla. Press down the ends. Grill for 2-3 minutes on each side. Process the remaining ingredients to quesadilla.

Cut into quarters and serve immediately.
