Eggnog muffins
 
To be honest, I wasn’t planning to post any Easter recipes this year. I don’t have any recipes in stock – I mean recipes I baked/ cooked the past years and which did not make it on the blog. So as I said ... I didn’t want to prepare something for Easter. But then, a few weeks ago, I received a nice request from Tchibo. They asked me if I want to participate at their Eastern blog parade. And I said yes. I had to choose between 3 different backing sets. The decision was not easy, because I liked all of them - but I loved the muffin wheel so I decided for the muffin set. Soon was also clear that I was going to bake these eggnog muffins. I had to do something with the homemade eggnog...I cannot drink it alone 😉

You need:

2 eggs
125 g butter
125 g sugar
125 g flour
1 tsp baking powder
125 ml eggnog

This is how we proceed:

Preheat oven at 180°C.

Give eggs, sugar and butter in a bowl and mix for about 5 minutes. Add flour and baking powder and fold in. Add the eggnog and mix.

Grease a muffin mold or muffin forms and fill 2/3 with the dough.

Bake muffins for 15-20 minutes. Remove from the oven and allow to cool.

Now you can leave the muffins as they are or decorate them.
