Potato and pumpkin pan with goat cheese


Hello ! This weekend, I cooked several pumpkin dishes. Today I present to you the first pumpkin recipe. It is a recipe that is prepared very quickly, and that has few calories.

We need (for 4 servings):


750 g potatoes
1 small Hokkaido pumpkin (about 750 g)
100 g rocket salad
100 g walnut halves
8 goats-cheese pieces
salt
pepper
oil





How do we proceed:

Peel, wash and cut potatoes into 1-1.5 cm pieces.

Wash pumpkin, cut in half and remove seeds. Cut it first in column, then into 1-1.5 cm pieces.

Heat some oil in a large pan. Cook potatoes over medium heat, flipping occasionally, for 15-20 minutes.



Heat oil in a second pan and fry the pumpkin for 10-15 minutes.



In the meantime wash the rocket and let it drain.

3 Minutes before the cooking time of the potatoes ends, add the walnuts to them. Season with salt and pepper.



Fry the goat cheese for 1-2 minutes on each side.



Mix the pumpkin, potatoes and rocket salad in a pan.



Add the goat cheese on top and serve immediately.
