Hi! Today I have for you a great recipe. Why is it so great? Because it is easy and fast to cook and because if you leave out a few ingredients, you have a vegetarian or even a vegan recipe. So...are you already curious? I speak about stuffed eggplant.
What
you need for this:

eggplants

g thin sausages

onions

peppers
mozzarella
crème
fraîche

What do you need to do:
Heat oven to 180°C degrees.
Wash, dry the eggplants and cut in half lengthwise. Take out the pulp with a spoon so that a 1 cm wide margin remains.
Peel onion and cut into cubes. In a pan heat a little oil and fry the onion for 2-3 minutes.
Wash, dry and cut the peppers into cubes. Add to the onion. Sauté for another 2 minutes.
Cut the pulp into cubes. Add it in the pan and fry.
At the end cut the sausages into slices. Add to the vegetables and fry them for 4-5 minutes.
Fill the eggplants with the mixture. Place in a, with baking paper covered gratin dish covered.
Garnish eggplants with a few spoonfuls of crème fraîche.
Wash tomatoes and cut into slices. Top the stuffed eggplant with tomato slices.
Cut mozzarella in slices and garnish the eggplant. Bake in the oven for 30-35 minutes.
Arrange on plates and serve.
Instead of the mozzarella you can also use cheese or Parmesan. To have a vegetarian dish, you need to leave out the sausages. And to have a vegan dish, just use tofu instead of mozzarella and exclude the crème fraîche.
