Pancakes with romanian ricotta and dill


Hello everyone. Today I want to share with you a recipe from my country. Pancakes filled with whey cheese, sugar and dill. The cheese is called "urdă" and is made from whey of sheep, goat or cow. The resulting cheese is rich in calcium, vitamins A, B2, B12, protein and contains no salt. It is fine-grained and silky and resembles the Italian ricotta. So you can use ricotta filling.

You need:


For the dough:

150 g wheat flour
11 pinch of salt
250 ml milk
100 ml water
1 large egg
2 tbsp melted butter (or 2 tbsp sunflower oil)






For the filling:

250 g whey cheese or ricotta cheese
2-3 tbsp sugar
dill





This is how it’s done:

For the dough: sieve flour and salt in a bowl. Add milk, egg, water and butter/oil and mix to a smooth dough. Let rest for 15 minutes.

Coat a pan with some oil. Spread a scoop of dough in the pan so that the bottom is covered. Bake over medium heat on each side for about 2 minutes until golden brown.

Stack the pancakes and keep warm.

For the filling wash, dry and chop the dill. Add the cheese, dill and sugar into a bowl and stir.
