Guinness cake


Hi all! You can not imagine how long I wanted to post this recipe. I am sure I've baked this Guinness cake already 5 times...and each time I told myself that I need to post the recipe because the cake tastes heavenly. But please don't ask me why it took so long as I cannot answer this question. But now I managed it and the recipe for Guinness cake is now online. And this is all that it counts.



What do we need:


For the batter:

 
250 ml Guinness or other dark beer
250 g butter
350 g brown sugar
280 g flour
140 ml buttermilk
80 g cacao powder
2 eggs
2 tbsp baking soda
1 tbsp vanilla extract
½ tsp salt
½ tsp baking powder

For the frosting:


175 g cream cheese
50 g butter, soften
4-5 tbsp icing sugar

This is how we proceed:


Preheat oven to 180°C.

Heat the beer together with the butter in a saucepan over low heat until the butter is completely melted. Remove from the heat and stir in cocoa, sugar and vanilla extract.




In a bowl, whisk together eggs and buttermilk and add over the butter-beer mixture. Stir well.



In another bowl mix flour, baking soda, baking powder and salt. Add the Guinness mixture and mix until you get to a smooth dough.



Grease a springform thoroughly and dust with cocoa powder, pour in the batter and bake for 50-60 minutes or until the toothpick test is passed. Remove from the oven, let it cool for 15 minutes in the pan and then let it cool completely on a wire rack.

For the frosting mix the butter with the icing sugar until fluffy, then fold in the cream cheese. If you like the frosting sweeter, then add a little more icing sugar. Give frosting in the refrigerator and spread over the cooled cake. Now, you can serve the cake.
