Hi all! You can not imagine how long I wanted to post this recipe. I am sure
I've baked this Guinness cake already 5 times...and each time I told myself
that I need to post the recipe because the cake tastes heavenly. But please
don't ask me why it took so long as I cannot answer this question. But now I
managed it and the recipe for Guinness cake is now online. And this is all that
it counts.
What do we need:
For
the batter:

ml Guinness or other dark beer

g butter

g brown sugar

g flour

ml buttermilk

g cacao powder

tbsp baking soda

tbsp vanilla extract

tsp salt

tsp baking powder
For
the frosting:
175
g cream cheese
50
g butter, soften
4-5
tbsp icing sugar
This is how we proceed:
Preheat
oven to 180°C.
Heat
the beer together with the butter in a saucepan over low heat until the butter
is completely melted. Remove from the heat and stir in cocoa, sugar and vanilla
extract.
In another bowl mix flour, baking soda, baking powder and salt. Add the Guinness mixture and mix until you get to a smooth dough.
Grease a springform thoroughly and dust with cocoa powder, pour in the batter and bake for 50-60 minutes or until the toothpick test is passed. Remove from the oven, let it cool for 15 minutes in the pan and then let it cool completely on a wire rack.
For the frosting mix the butter with the icing sugar until fluffy, then fold in the cream cheese. If you like the frosting sweeter, then add a little more icing sugar. Give frosting in the refrigerator and spread over the cooled cake. Now, you can serve the cake.
