My dears...although I came back from my short vacation some days ago I must be honest and confess that I wasn't shopping yet . Therefore I have to cook with the ingredients I find at home in my pantry. So today I cooked risotto with dried tomatoes.
For 4 servings you need:
Peel onion, chop finely and glaze in a pot with melted butter. Add the rice, the basil and the dried tomatoes and sauté briefly and deglaze with the wine. Let it be absorb completely while stirring. Pour so much stock until everything is covered. When the rice absorbs the stock, add stock until you consumed all of it and the rice is cooked al dente.
For 4 servings you need:

g risotto rice

ml dry white wine
600
ml vegetable stock
olive
oil

onion

tbsp butter

tbsp freshly grated Parmesan cheese
dried
tomatoes, cut in small pieces
1
tbsp dry basil
4
cherry tomatoes
And this is how you
proceed:
Fold in the Parmesan and season with salt and pepper.
Arrange on plates, garnish with dry and fresh tomatoes and serve.
