Can
you believe that we are already in May? I can’t believe it. Sometimes I have
the feeling that time passes very quickly. Yesterday everything was so gray and
now everything is green. The air smells like fresh flowers and we find again
elder flowers. Last year, I showed you how to make elderflower syrup. And now I will show you what you can bake with it: an
elderflower syrup bundt cake.
You need:
100
g soft butter
150
g icing sugar
4
eggs
100
ml elderflower syrup
1
tbsp vanilla extract
250
g wheat flour
7
g baking powder
This is how we
proceed:
Preheat
oven to 170°C degrees.
Whisk
butter together with icing sugar until creamy. Add gradually the eggs and stir
well. Add elderflower syrup and vanilla essence and stir at low speed. Mix
flour and baking powder, and fold in.
Pour
dough into a greased and floured mold and bake for 40-45 minutes. Allow to cool
slightly, remove from the mold and let cool completely on a rack. Sprinkle with
icing sugar and serve.
