Green asparagus on toast with poached eggs



Hello everyone! Have you seen? You can again buy asparagus. And what does this mean? Exactly...it means that I searched again delicious asparagus recipes. And I quickly found some, so here is the first asparagus recipe: toast with green asparagus and poached egg. The recipe comes from the book "The Ultimate Vegetarian Collection" by Alison & Simon Holst.


For 4 servings you need:


4 slices bread
1-2 tbsp butter
250 g green asparagus
4 eggs
salt
pepper



This is how you proceed:


Toast the bread from both sides.

Wash the asparagus, cut the woody ends and peel the bottom half. In a large frying pan bring 5-10 mm water to a boil, add the asparagus and cook covered for 3-4 minutes, shaking it occasionally.




When tender, drain off the water, return the asparagus to the hot pan, add the butter and cook for 2-3 minutes. 

Place a piece of toast on each plate and arrange the asparagus on top of the toast.

For the poached eggs, bring water in a pan to a boil. Crack every egg in a cup. When the water boils, reduce temperature so that the water doesn’t bubble. Stir in with a wooden spoon so that a vortex is formed. Carefully slide the every egg separately into the water and take it out after 3-4 minutes with a slotted spoon. Drain and place on the asparagus toast.
