Cheesecake is a dessert consisting of a topping made of soft, fresh cheese, usually on a crust or base made from biscuit, pastry or sponge cake. They may be baked or unbaked. Cheesecakes are frequently sweetened with sugar and may be flavored or topped with fruit, nuts, fruit sauce and/or chocolate.
For the crust:
- 300 g biscuits
- 100 g melted butter
- 6-10 tbsp milk
For the cream:
- 600 g fresh cream cheese
- 250 g whipped cream
- 90 g icing sugar
- 1 package gelatin
Preparation:
Crust:
Crumble the biscuits. Mix the crumbled biscuits with the melted butter. Add the milk. Press into the bottom of a spring-form pan. Put the spring-form in the refrigerator (leave it there until you make the cream).
Cream:
Put the gelatine in cold water (100 ml or according to package instructions) and let it swell for 10 min.
Mix the cream cheese with the sugar.
Mix the whip cream until it gets stiff. Caution: The cream shouldn't be at room temperature, otherwise you will get butter. Add the cream to the cream cheese-sugar mixture and stir.
Heat the gelatine on bain-marie. Caution: Do not boil the gelatine!
And this is the final product. Before serving, I have also grated some chocolate over the cheesecake.
