Hello! Actually I wanted to bake lava muffins (Chocolate muffins with
liquid content) but it did not work out. But anyway, these chocolate cakes were
delicious and I thought that I must share this recipe with you.
- 150 g dark chocolate (70% cocoa)
- 20 g flour
- 2 eggs + 1 egg yolk
- A pinch of salt
- 10 g cocoa
- 80 g butter
- 90 g icing sugar
- 1 package vanilla sugar
Preparation:
Coarsely chop the chocolate and
melt over water bath, stirring constantly. Once the chocolate has melted, add
butter and continue stirring (until the butter also melts). Then let it cool
down.
Mix the eggs with the icing and vanilla sugar with an electric mixer for
5-6 minutes. In the end, the cream should have a fluffy consistency.
Carefully add the chocolate mixture and continue stirring. Consecutively
add cocoa, flour and salt.
Dust the forms (ideally, you should take aluminum molds. I had none, and I
used paper muffin molds) or well-greased cups with cocoa. Give the chocolate
mixture into the forms (should not full because they grow).
…and bake in the preheated oven
at 180 degrees for 10 - 15 minutes. The surface should be firm and slightly
curved, and have fine cracks. Take out the baking tin from the oven and let the
cakes rest for about 2 minutes in the molds. Put them on a dessert plate and
dust with cocoa.
As I said in the beginning, my
cakes did not have a liquid core, but were still good. I've given too much
chocolate mixture in the forms and they had to stay more in the oven. Although
my attempt failed, I'll try it again anyway and you will be informed of the
result.
