Do
you know what I’ve noticed? That I have not published a cookie recipe for ages.
Well, I have not baked cookies for ages. I wonder why. I like cookies and they
are easy and fast to make. I'm now sorting out my cookbooks. That means I look
at the books and when I realize that no recipe appeals to me, I sort it out.
And while I looked through the book "Cook's bible - baking" I came
across the recipe for peanut butter cookies. Since I have an open peanut butter
jar in the house (and I did not know what to do with it), I spontaneously
decided to bake the peanut butter cookies. That was a good decision, because
the cookies taste incredibly good. Here is the recipe...if you want to bake

As you know I am not a
vegan. Nor a vegetarian. But I like to try out new recipes. Also vegan recipes.
When it comes to cooking, I have no problems…I find it very easy to cook vegan.
But when it comes to baking…this is another story. But I don’t give up. My
biggest problem is replacing eggs. The other ingredients I can replace without
problem: instead of butter I take margarine or oil. Instead of honey I take
maple syrup. And instead of milk I take almond milk. So I decided to make
almond milk. One can buy it in the shops to buy I have a problem: one can
always buy 1 liter. But often I need much less. And before I buy too much, I
prepare it myself. The almond milk is easy to prepare...you only need almonds
and water. You can read below how you can make almond milk.

The summer is over now. I was
hoping that we will have some nice late summer days or nice autumn days, but
this is not the case at the moment. Theoretically autumn is not so bad...if it
wouldn’t rain so much. And if the days wouldn’t be so gray and cold. What I
like about autumn is the colourful leaves and the seasonal fruits and
vegetables. Figs, mushrooms, pumpkins...they all have season now. All this
makes my heart beat faster...because I can finally use all these ingredients
again. And share with you recipes that have been waiting for years to be
published. For example, these fried king oyster mushrooms with mozzarella and
walnuts. The first time I cooked the recipe 3 years ago. And then 2 years ago.

I know, I know. There are
already 2 pavlova recipes on the blog. At the beginning I didn’t want to
publish today’s recipe. After I cooked the asparagus with sauce hollandaise, I remained
with 2 eggs whites. I decided to bake mini pavlovas. When I was home for
Christmas I had an attempt to bake some. But since I was not familiar with the
oven and I also had no oven thermometer I burned the pavlovas. At my place I
always use a thermometer so this time everything worked just fine. When I tried
the first piece I was so excited that I could not keep the recipe only for me. And
I think you will not mind.

few weeks ago I bought a 3-in-1 sandwich maker. My sandwich maker broke, so I
was looking for a new one. And then I have found a cheap 3-in-1 device. In
addition to the sandwich plate, it also has a grill and a waffles plate. I had
to test everything, so I decided to prepare an antipasti plate. Everything
worked very well so that I can show you today the result. An Italian antipasti
plate is something very tasty and even if you don’t own a grill, you can
prepare it. I will not make state any quantities, only a list of the
ingredients and the preparation method.

As you can still find sour cherries to buy, I thought it is time to show you the recipe for homemade cherry liqueur. I made this liqueur 2 years ago, but I didn’t manage to publish the recipe until now. I don’t want to wait another year, so I publish today. As you just notice, today I have no inspiration for a better introduction. I just repeat myself. Sometimes this happens 🙈. Last week I bought 1 kg of apricots. I love them, but I can not eat 1 kg within one day. Usually you don’t have to, because the apricots don’t spoil within a few days. But that's exactly what happened to my apricots. When I wanted to eat a new apricot the next day, I realized that some were spoiled. And I still had so many. So what could I do? I did not want to make jam. And also no liqueur, because I have 2 others in the making. So I decided to bake a cake. I read some recipes in my cookbooks and then decided to make an apricot sprinkle cake.

The weather was not particularly nice this week in Vienna. It rained a lot and it was pretty cool. I really wondered if the summer was already over. The good thing about it was that I have cooked again. When it is warm in the summer, my oven usually stays cold. But now I could make the stove hot without having 100 degrees in the apartment. It wasn’t planned to make this cocktail. Now I will tell you the story behind this cocktail: a few weeks ago my sister visited me for a few days. And she bought raspberries. But she did not eat them, so they remain in the fridge. This is not a big deal you will say. You are right, but I am also allergic to raspberries. So what to do with them? As with the strawberries, I can eat a small amount without getting skin rash. So I decided to use some raspberries in a cocktail. I then opted for this ice cream cocktail. The other raspberries were eaten by a friend of mine, so nothing was thrown away.

Today's recipe comes from Donal Skehan, a cook whose recipes I really like. I happened to see this recipe on his Facebook page and I found it sounded very tasty. So I decided to try it out. And I was more than thrilled: the pasta with roasted vegetables tasted super delicious. Fortunately, I have made 2 portions - so now I can say that this dish also tastes cold delicious. So it is also something that you can take for a picnic. I will cook the recipe again and again. Because I am just thrilled!

Some time ago I bought an enamel loaf pan from Tchibo. Somehow, I lost one of my loaf pans and I needed a new one. So when I saw the one from Tchibo I had to buy it. I like enamel dishes, this was pretty and practical. The loaf pan came also with some recipes but I found only one interesting. Exactly, it was the recipe for the fast spelt bread. I've changed the recipe a bit and this has come out.

If you only knew since when I wanted to share this panna cotta recipe with you! In the summer of 2014 I once again prepared panna cotta. And I decided to serve it with cherry sauce. But when I wanted to put the recipe online, the season for cherries was already over. Then I said: not so tragic, you will publish the reptile next year. But since then three years passed. This year, I decided to publish the recipe. When I looked at the old photos, I was quite dissatisfied with them. So I decided to prepare panna cotta again. And then I had the idea of trying 2 new variants - they had been on my To-Do list for some time. Therefore today there is not one panna cotta recipe but 3.

When I cooked the Tom Yam Gai soup I used seafood but some not all I bought. At first, I did not know what to cook with the remaining seafood. My first idea was pasta with seafood. But then I remembered my Tuscany vacation. During this holiday I have eaten some great food which I have planned to cook. One of this great dishes was the the spaghetti cacio e pepe but also risotto with seafood and pesto. The risotto I have only tasted, but I liked it so much that I kept it in the back of my head. I actually had no recipe for the risotto with seafood and pesto but that did not prevent me from cooking it. I just started and today you can see the result here.

The ones who follows me on Instagram knows that I have started to sort out my cooking magazines collection. I collected so many magazines over the last years but I almost never cook from them. But since they take so much space, I decided that it is time to trough away some of them. So I looked at each magazine and more than a half had to go. Most of the recipes were not so exciting or have many repeated themselves. When I sorted out the recipes I saw this recipe of a potato and radish salad and I decided to cook it the next day as I had most of the ingredients at home. What I didn’t have was not used. While I was preparing the salad, I noticed that it is a super leftovers recipe. So I quickly added a few ingredients and so this potato and radish salad was created.

Today I wanted to show you a cookie dough ice cream recipe. This because I love the cookie dough ice cream from Ben & Jerry...I really love it. I buy almost only this ice cream. Now you surely ask yourself why I blog only a vanilla ice cream recipe. If you look more closely at the pictures you will recognize the cookie dough inside. Well...I made the ice, but the cookie dough does not taste good. Maybe I was hoping my ice cream comes close to the original (got the recipe from the B&J book). But I was wrong. Today is such a day when I have no inspiration. I would like to tell you something about today's recipe, but my mind is empty. Perhaps it is like this because this is actually a leftover recipe. The day before, I had steak, but I did not eat the whole piece. The next day I had the idea to make a steak sandwich for breakfast. I do not know about you, but I drink too little water. An adult should drink more than 2 liters of water a day. But on most days I don’t even drink 1 liter. The problem is that I do not feel the need to drink more. But my skin suffers (it is very dry) so I will try to drink more. Do you remember the story with the nectarines from the previous year? No? Ok, I'll tell you briefly what it was about: last year I bought nectarines, although I knew they would not taste. A few weeks ago I finally baked this olive cake. I wanted to bake this cake so many times, I think it was on my to-do list for at least 2 years. I eat this olive cake quite often...because it is a constant companion at all our parties. If we celebrate a birthday or are only grilling...the olive cake is always served. The ones who have been following my blog for a longer time have certainly noticed that there are no recipes with strawberries. This is because I am allergic to them. I cannot eat more than 2-3 strawberries without risking a skin rash. For this reason, I avoid eating strawberries. I made an exception for the strawberries buns with cream cheese frosting. I bought strawberries (but do not ask why) and I did not want to throw them away. So I decided to bake these strawberry buns for my work colleagues. I also tasted one...as I said...I can eat 2-3 without having any problems. Do you suffer from allergies?

As you know, at the beginning of the year I was in Thailand. And those who follow my Instagram account also know I was very enthusiastic about the Thai food. I was so excited that I even attended a cooking course in Kho Lanta, our last stop. At the beginning I was not quite sure whether it would be worthwhile to visit a cooking class. I was not sure if I would find all the ingredients at home to cook the dishes at all. But I decided to go for it, as the class was not that expensive. And I didn’t want to regret that I didn’t go. I have looked at the offers from a few cookery schools and then decided for one. And I'm so glad I went to this cooking course.

My dear readers, it's time for a new recipe. This time I did not have to think long...I knew exactly what recipe I wanted to publish. As you know, I bought wild garlic about 2 weeks ago. To be honest, I wasn’t planning to post any Easter recipes this year. I don’t have any recipes in stock – I mean recipes I baked/ cooked the past years and which did not make it on the blog. So as I said ... I didn’t want to prepare something for Easter. But then, a few weeks ago, I received a nice request from Tchibo. They asked me if I want to participate at their Eastern blog parade. And I said yes. I had to choose between 3 different backing sets. The decision was not easy, because I liked all of them - but I loved the muffin wheel so I decided for the muffin set. Soon was also clear that I was going to bake these eggnog muffins. I had to do something with the homemade eggnog...I cannot drink it alone 😉

I needed 3 attempts to find the perfect lemon curd recipe. I have tried this recipe three years ago, everything worked well, but I had not taken any pictures. And back then I thought that I used too many eggs. Therefore, I tried another 2 recipes. Unfortunately the result was not satisfactory. So I went back to the beginning and I prepared again the lemon curd after the first recipe. And, of course, everything was right: consistency and taste. This time I took also pictured so today I can present you the recipe for lemon curd.

Yesterday I made for the first time ravioli and I cooked for the first time with wild garlic. 2 things I wanted to do for a long time. Unfortunately, the wild garlic season is always so short...and I do not know where I can pick it. But luckily you can buy it. Last year I did not find any when I decided to cook with it. This year I saw it in the supermarket and bought it right away...safe is safe. And ravioli ... I also wanted to prepare them for ages...I even bought a ravioli mold last summer. I had many ideas for the ravioli…but I just didn’t have the time to cook them. Until yesterday...when I cooked ravioli cooked with wild garlic filling. Oh man... have they tasted good. I will certainly make more often ravioli...even if it is a little time-consuming. But the effort is worth it.

It has been months since I last baked waffles. Every time I make some waffles I say I will make them more often. And every time the waffle iron remains unused for a few months. And this even though I still want to try so many recipes: on my list are pizza waffles and Belgian waffles with warm cherries. Today, however, I have a recipe of tomato-mozzarella-basil waffles. These I baked recently and they taste so delicious. They are perfect for breakfast.

For a few months I am the proud owner of a tajine. Yey! 3 years ago when I saw on Cook'n'Roll the recipe of a lamb tagine I wanted to buy one. The recipe sounded so delicious that I wanted to cook it. But I had no tajine, and I didn’t find one to buy. And after a while I then I just forgot about it…or I just ignored the fact that I wanted to buy one. I don’t have any space in my kitchen for stuff. I can’t believe it! I finally managed to bake donuts. You cannot imagine since when I want to bake some. Is it 2 years? Yes, I think so. I even bought a small baking book with donuts recipes. Every time I see on another blog a donuts recipe I say I will bake some in the weekend. But always something else comes in between. Either I bake something else or I do not feel like baking. Or I'm not at home at all. And so time passes. But 2 weeks ago this changed. I wanted to bake something sweet. As I wanted an easy and fast recipe I decided to bake donuts.

Actually I wanted to go shopping on Saturday, but then I decided to go out for lunch with some friends. I then planned to buy bread on Sunday, but I was too lazy to go out. Lately, I'm quite unorganized about the blog. Not that I am an organized person or that I have a plan which I follow. No not that. But I have always prepare 2-3 posts prepared, so I don’t have time problems. But since my holiday this changed. Either the time is missing or I am not in the mood to work on new posts. And so it happens that the days pass and I have not prepared anything new for the blog. My last posts were spontaneous – I knew I “have to” publish something new…than I asked myself: what recipe should I publish next? Luckily, I still have some recipes that I have not yet blogged...but this will change in the near future... can you imagine that I haven’t been cooking for almost two months? Yes, a few things I cooked, these were also blogged. But I haven’t baked a cake or cook a main dish in a while. I must change this too. Today I knew it was time for a new post - but what? Then I noticed that I haven’t posted a dessert for a long time. So I looked into my dessert folders and I knew what to blog next. I started to drink smoothies again. Now in the cold season we should strengthen our immune system. I do not take vitamins, but I eat a lot of fruits and vegetables. And I drink smoothies. I take everything the refrigerator has to give and experiment cheerfully. Sometimes these experiments succeed, sometimes not. The orange carrot banana smoothie was a successful experiment and I want to share the recipe with you. Maybe you want to try it out.
